What is a Casbah?
Morocco is a land of contrast, magic, and timeless wonders where nourishing fertile lands meet snow-capped mountains, golden deserts stretch to the sea, and lush oases bloom amidst arid sands.
Amidst this breathtaking landscape, a Casbah stands as a sanctuary and symbol of home. Traditionally, a Casbah is a fortified medina or citadel, often perched atop a hill, overlooking the city or village below. Its winding alleys, earthy walls, and ancient towers embody the spirit of Moroccan resilience and community.
For Moroccans, the Casbah is more than stone and mortar. It is a place of safety, gathering, and cultural heritage, a peaceful refuge where stories are shared, traditions preserved, and life’s simple joys celebrated.
At The Casbah, every detail is designed to transport you to Morocco’s rich cultural tapestry. Our ambiance features warm lantern light and exquisite wood carvings that create an inviting and authentic casbah atmosphere, immersing you in the artistry and craftsmanship of Moroccan heritage.
Our cuisine celebrates Morocco’s culinary heritage through authentic dishes crafted from time-honored recipes. From slow-cooked tagines bursting with fragrant spices to fluffy steamed couscous and flavorful vegetarian options, each plate tells a story of passion and tradition.
More than a meal, dining at The Casbah is an immersive experience that honors Moroccan hospitality and customs. Whether sharing a communal feast or enjoying intimate conversation, you’ll feel the warmth and generosity that define Moroccan culture.
Join us at The Casbah and discover the magic of Morocco through its food, atmosphere, and heartfelt traditions.
"To my mind four things are necessary before a nation can develop a great cuisine. First the abundance of fine ingredients - a rich land. The second is a variety of cultural influences: the history of a nation, including it's domination by foriegn powers and the culinary secrets it has brought back from its own imperialist adventures. Third, a great civilization - if a country has not had its day in the sun , its cuisine will probably not be great; great food and a great civilization go together. Last, the existance of a refined palace life - without royal kitchens,...without the demands of a cultivated court - the imaginations of a nation's cooks will not be challenged" - Paula Wolfert, Couscous and Other Good Food from Morocco.

We respectfully acknowledge that The Casbah is located on the traditional and unceded territories of the Treaty 7 nations, including the Blackfoot Confederacy, the Tsuut’ina Nation, and the Stoney Nakoda Nations, as well as the Métis Nation of Alberta, Region 3. We honour and thank the Indigenous peoples whose stewardship of this land continues to inspire and enrich our community.
The Casbah opened its doors in 2005, born from a passion for sharing the rich flavors, vibrant culture, and heartfelt hospitality of Morocco with the city of Calgary. Inspired by the traditional casbahs, the fortified homes and community hubs found throughout Morocco, our restaurant aims to be a sanctuary where guests can experience the magic of Moroccan life.
Founded by a family deeply connected to their Moroccan roots, The Casbah brings generations of treasured recipes and culinary traditions to every table. From the tender slow cooked meats to the aromatic spices and tender steamed couscous, each dish reflects the warmth and soul of Moroccan cooking.
More than just food, The Casbah is a celebration of Moroccan heritage. Our intimate space is adorned with authentic wood carvings, glowing lanterns, and vibrant cultural décor that evoke the spirit of a true Moroccan casbah. Here, every meal is an invitation to slow down, connect, and savor the moment, just as families do across Morocco.
We invite you to join us on this journey and discover why The Casbah is more than a restaurant. It is a gathering place where tradition, taste, and togetherness come alive.
